Robbie Lynch once served $5 all-you-can-drink coffee from his driveway every Sunday. That community spirit is still the heartbeat of Almanac Coffee.
Some origin stories are too good to be made up. Before Robbie Lynch was supplying some of Brisbane's best cafes, he was running an unofficial Sunday coffee club from his garage — $5, all you can drink, up to 50 people crowded into the driveway.
"It was just a little passion project," Robbie says. The local council eventually put a stop to it, but the spirit of that community-first approach never left. It became the heartbeat of Almanac Coffee.
The Science of Funky
Robbie has carved out a genuinely distinct niche in Brisbane's specialty coffee scene. His signature style — "funky, fermenty, and fruity" — is a deliberate departure from the chocolate-and-wood notes that dominate traditional roasts.
The beans are typically Colombian or Ethiopian, processed through complex fermentation techniques that draw out natural acidity and sweetness. The result is coffee that surprises you — bright, layered, alive.
"I like things a little bit different," he says. "Every time you drink an Almanac coffee, I just hope you think, 'That's a good coffee.'"
Small Batch, Big Intention
Almanac operates on a small-batch model — deliberate, careful, unhurried. Each roast is considered. Each bean has a story. It's the antithesis of the commodity coffee model, and Brisbane's cafe scene has taken notice.
