

Caviar, Wagyu and a Stunning Private Dome at JW Marriott Gold Coast
JW Marriott Gold Coast Resort & Spa has introduced private igloo dining beside its saltwater lagoon, and the result is one of the most striking culinary experiences the Gold Coast has seen this winter.
Private Dining Under the Stars runs Monday to Wednesday evenings through to 26 August — your own fairy-lit dome beside the lagoon, a dedicated host for the evening, and a six-course degustation from Citrique, the resort's 2 chef-hatted restaurant. It's part of Marriott Bonvoy's Winter After Dark campaign — a new collection of after-dark experiences across Australia, New Zealand and the Pacific, designed to inspire travel over winter and celebrate the atmosphere and beauty of the season after sunset with experiences best enjoyed under the cover of night.
Why It's Worth Your Attention
Citrique is one of Queensland's most decorated restaurant teams, and Director of Culinary Paul Smart has built a menu worthy of the setting. The evening opens with a glass of Moët & Chandon Imperial Brut and a 30g tin of premium caviar — a considered opening that sets the tone before a course has even been served.
From there, six courses unfold: Beetroot & Goats' Cheese Involtini leads into Seared Scallops with Chorizo, matched with a Craggy Range Sauvignon Blanc. Chef's Signature Moreton Bay Bug Dumplings arrive alongside a Kellerei Kaltern Pinot Grigio, followed by Oven-Baked Snow Fish with Collector 'Tiger Tiger' Chardonnay. The MB 8–9 Wagyu Steak is the evening's centrepiece, paired with Leeuwin Estate Prelude Cabernet Sauvignon, before the JW Citrus Illusion Dessert closes the night with an Alasia Moscato d'Asti.
The wines are drawn from both Australian and international producers, with each pairing chosen to complement rather than compete with what's on the plate.
The Setting
The domes are clear, all-weather, and positioned directly beside the saltwater lagoon — dressed with soft fairy lights and sized for two or a small group. A dedicated host manages the evening from arrival to final course, leaving little to think about beyond the food and the company.
